Chocolate Chip Cookies - My Ultimate Comfort Food.
There are days when only one thing will do—a cookie that’s gooey in the middle, crisp on the edges, and makes your whole kitchen smell like happiness.
It’s still the best boost of serotonin there is, at least for me. It’s been close to five years now making the same chocolate chip cookie recipe and every time I test it straight out of the oven, it makes me fall in love all over again.
And that’s the thing about chocolate chip cookies is that there’s one for everyone. Some prefer a thin and crispy cookie, others a perfectly cakey cookie, but this chocolate chip cookie likes to shape shift. It’s true what they say, baking is a science and it is also heavily impacted by quality ingredients, temperature and humidity. While living in Southern California means almost year round summer, it can still make for challenging environments.
I accept this cookie in all its forms - when I’m impatient and want a quick cookie and don’t let the brown butter cool then I know I’m in for a thin and gooey cookie. This is perfectly paired with an ice cream scoop and can make for a delicious ice cream sandwich. There are other times when I decide to not weigh out ingredients which can result in sugar and flour ratios being off, making for a cakier cookie with a bit more bite to it and it makes for the perfect dunkable cookie.
However, when the stars align and I bake with science and passion, not skipping any steps and with patience on my side - that’s when I get my Colibri Signature Cookie. Even with all the changes this cookie can experience, the flavors are never compromised.
